Course Introduction

This degree focuses on food analysis and food microbiology, as well as product development and quality control. Staff are active within the Institute of Food Science and Technology and regularly involved with the food industry as expert consultants. Our food business development colleagues are also involved in teaching and work closely with us. The course includes opportunities for an industry work placement. This course allows students to study food analysis, sensory analysis, food microbiology related to food safety, spoilage and fermentation's, and product development and quality control. The structure of the course gives students a core of essential knowledge and skills for their future careers. They can choose to emphasise laboratory'based subjects such as food microbiology and food analysis or areas such as quality assurance or food production and development including sensory analysis. The subjects in the course develop their knowledge of food manufacturing and processing, analysis and testing packaging, storage, distribution, , legal'aspects, sustainability and food security.

Course Modules

Core modules: Advanced food analysis; food microbiology and safety; food product development and sensory analysis; advanced food processing; food safety and quality management; scientific research methodology for food scientists; food science research dissertation.

Course Additional Entry

A 2.2 Honours degree (or above) in food science or a related subject, such as microbiology, biochemistry, nutrition or agricultural sciences, or equivalent overseas qualification. Mature students with lesser qualifications but extensive appropriate experience will be considered on an individual basis. Proficiency in the English language is essential and international students are expected to meet the University's English qualification requirements. Applicants whose 1st language is not English require IELTS 6 or equivalent.
